Sous CHEF - Full time
 

The Railway Inn is a busy train station pub next to Portslade train station. It is a large site that also caters for events with its own private hire room. In normal times there is always something happening with quiz nights, music events, craft clubs and a range of other eclectic entertainment.

 We have a steady food trade in the week with various food offers and specials board options. When open during the pandemic our menu has focused on good quality burgers and traditional British dishes. Vegetarian/ vegan/ gluten free dishes are a popular part of our food offer. Our Sunday lunch service is a busy day for the pub.

Behind the scenes we have a production kitchen that is busy making various doughs, homemade gelato and deserts to distribute to our other sites.

We have just built a butchery room at another site which all our chefs will have access to.

 

Ideal experience/ candidate:

  • We are looking for a strong sous chef who wants to work hard, learn and progress

  • Appreciates the importance of consistency, running the kitchen to the required standard when the head chef is off

  • Loves cooking with the freshest ingredients

  • Good knowledge of vegetarian/vegan/gluten-free dishes

  • Good at creating a professional yet fun environment to work in for your team

  • Cool headed in a high-volume environment

  • Organised and able to support the head chef to achieve financial target

  • On top of food hygiene and allergen checks

  • Health and safety aware

  • You need to have several years’ experience in a similar role with a passion for the pub industry

  • £25 - £29k pa based on a 48-hour week – (discussed dependent on experience)

  • Incentive bonus scheme equal to 5 % of salary

Sous Chef - Full time
 

The Lewes Road Inn is a community/student pub on the Lewes Road. This has had an extensive refurbishment but due to the current covid climate we have not had the opportunity to push the pub to its full potential. It is a large site and once restrictions are lifted it will have a whole host of eclectic entertainment, live music, events etc

The food offer is based around our very big pizza oven alongside traditional British dishes. Our head chef is a pizza master and is looking for a sous chef to support him in what has the potential to be a busy site. Vegetarian/vegan/gluten-free dishes are a popular part of our food offer.
Sunday lunch service has the potential to be a big part of the week.

Behind the scenes we have a production kitchen at The Railway Inn that helps make the pizza dough, homemade gelato and deserts to distribute to our other sites.

Head Chef - Full time
 

The Stirling Arms is a back street community pub in Hove. It will reopen after the current lockdown with a new kitchen and extensive refurbishment to the main pub area. In normal times this is a busy site, we run our gourmet kebab menu from the pub which has proved to be popular.
Along side our kebabs we also offer a traditional roast menu on Sundays.

  • A people person, with a hands-on approach

  • Loves cooking with the freshest ingredients

  • Good knowledge of vegetarian/vegan/gluten-free dishes

  • Experienced leading a team to produce consistently great food

  • Good at creating a professional yet fun environment to work in for your team

  • Cool headed in a high-volume environment

  • Very organised with a solid grasp of the financial side of the business – stock takes, costings, staff percentages etc

  • On top of food hygiene and allergen checks

  • Health and safety aware

  • You need to have several years experience in a similar role with a passion for the pub industry
